Ajvar
Ajvar, considered a cornerstone of Macedonian cuisine, is a type of traditional sauce. Served year-round at breakfast and alongside meals, ajvar has spread from Macedonia to other Balkan countries. Because it's stored in jars, it stays fresh for days, especially during the long winter months. This delicious sauce is also consumed spread on bread. Pindzur is known as a much more intensely spiced version of ajvar.
